APRICOT WALNUT CAKE 
1 1/2 c. Crisco oil
2 c. sugar
4 eggs
3 c. flour
1 1/2 tsp. baking soda
1 tsp. salt
1 (13 oz.) can of evaporated milk
1 jar or can of apricot pastry filling
1 tsp. vanilla
2 c. chopped walnuts

Mix or beat with hand mixer all of the above ingredients. I mix like the first 3, then the next 3, until all is mixed.

Bake in ungreased 10 inch tube pan at 350 degrees for 1 hour and 10 minutes. Cool upright in pan for one hour, then turn on to serving plate and let it sit for another hour.

BUTTER ICING:

1 1/2 c. powdered sugar
1 tsp. vanilla
1 c. blended walnuts
1/2 lb. of butter plus a half of a quarter

Let butter soften at room temperature until it is very soft. Then beat the above until creamy. Decorate the above with maraschino cherries.
