CHICKEN SCALOPPINE 
1 lg. egg whites
2 tbsp. water
1 c. fresh bread crumbs
2 tbsp. chopped parsley
1 tsp. minced garlic
1/4 tsp. pepper
4 chicken cutlets, pounded thin
4 thin slices lean prosciutto ham sact
2 tbsp. olive oil

Preheat broiler. Whisk egg white and water together in shallow dish. Combine bread crumbs, parsley, garlic and pepper in another shallow dish. Season chicken lightly with salt. Press 1 slice prosciutto on each piece chicken. Dip in egg white mixture, then crumbs. Place on broiler rack; sprinkle with one tablespoon oil. Broil 3 minutes; turn and sprinkle with remaining oil. Broil 3 minutes more.
