ZEPPOLE 
2 eggs
1 c. flour
2 tsp. baking powder
1 pinch of salt
1 1/2 tsp. sugar
1 c. Ricotta cheese
1/4 tsp. vanilla

Beat eggs slightly. Add remainder of ingredients and beat gently until combined batter becomes sticky. Drop by half teaspoon (push off batter with another spoon) into deep corn oil; heat to 375°F, frying a few at a time, until Zeppole are golden brown, about 3 minutes. Drain on brown paper and roll in confectioners sugar. Serve at once.
