PORK CAKE 
1 lb. ground pork fat or 1 1/2 c. Crisco shortening
1 pt. strong coffee
1 box raisins
1 c. nuts (optional)
7 c. flour
1 tbsp. baking soda
1 tbsp. cinnamon
1 tbsp. nutmeg
Pinch of salt

Pour the boiling hot coffee over fat. Stir to dissolve. Reserve small amount of flour to dredge raisins and nuts. Blend in sugar, then other dry ingredients. Lastly, add nuts and raisins which have been dredged with flour. Bake at 325 degrees for 1 hour in large tube pan.
