ZUCCHINI BARS 
FILLING:

Cook 6 to 8 cups sliced, peeled zucchini in 2/3 cup lemon juice until tender. Add 1 cup sugar, 1/4 teaspoon nutmeg and 1/2 teaspoon cinnamon, simmer for 10 minutes. Add 1/2 cup reserved crust mixture to thicken, then cool.

CRUST:

4 c. flour
2 c. sugar
1/2 tsp. salt
3 sticks butter

Combine flour, sugar and salt. Cut in butter like pie crust, pat 1/2 of mixture in bottom of 10"x15" pan. Bake for 10 minutes at 350 degrees. Add cooled filling then add 1 teaspoon cinnamon to remaining mix and sprinkle on top. Bake for 30 minutes. These bars taste like apple bars.
