WINTER SQUASH QUICHE | |
1 (9") pie pastry shell 4 slices bacon 2 tbsp. chopped onion 1 c. shredded Swiss cheese 3 beaten eggs 1 1/2 c. milk 1 c. mashed, cooked squash 1/2 tsp. salt 1/8 tsp. nutmeg 1/8 tsp. pepper Bake pastry and keep warm. Cook bacon until crisp, drain and crumble. Saute onion. Sprinkle cheese, bacon and onion in pastry. In a bowl, combine eggs, milk, squash, salt, nutmeg and pepper. Pour into pastry. Bake at 325 degrees for 40 to 45 minutes. Let stand 10 minutes. Garnish with bacon, if desired. |
