PICANTE SAUCE | |
1 qt. tomatoes 1 med. green pepper, cut up 1 med. onion, cut up 2 med. fresh jalapeno peppers or hot red peppers, chopped 1-2 cloves garlic 1/2 c. vinegar 1 tsp. salt 1 tsp. sugar Dash dried oregano, crushed Dash cayenne red pepper Dash ground cumin In blender container coarsely grind unpeeled tomatoes. Add green peppers, onion, hot pepper and garlic to tomatoes. Process until vegetables are coarsely ground. Stir vinegar, salt, and sugar into vegetables. Transfer vegetables to a 3-quart saucepan. Simmer uncovered, over heat about 25 minutes or until desired consistency. Stir in oregano, cayenne and cumin; season to taste with salt. Store in refrigerator in tightly covered container. (More spices may be added to desired taste) or pack into sterilized jars and process 15 minutes in boiling water bath. Yield: 2 1/4 cups. |
