TOMATO SALSA 
1 (28 oz.) can whole peeled tomatoes
1 (8 oz.) can tomato sauce
1 lg. onion, finely chopped
1/3 c. sliced mild green chilies
1/3 c. chopped green pepper
1 lg. clove garlic, crushed
1 tbsp. chopped cilantro
1/2 tsp. ground cumin
1/2 tsp. salt
1/3 tsp. pepper
Minced jalapeno chile
Hot pepper sauce

Drain tomatoes, reserve liquid, cut tomatoes into small pieces. Place in bowl. Add reserved liquid, tomato sauce, onion, green pepper, chilies, garlic, cilantro, cumin, salt and pepper.

For a medium hot sauce add 1/2 to 1 teaspoon jalapeno chile. For hot salsa add 2-3 teaspoons jalapenos plus 10 drops hot sauce.
