PHILIPPINE CHICKEN BREAST 
3 chicken breasts
1 (6 oz.) can unsweetened pineapple juice
1 bay leaf, crumbled
1/4 c. vinegar
1/4 c. soy sauce

Place chicken pieces skin side up (or can remove skin) in single layer in skillet and brown. Then place in casserole dish. Combine remaining ingredients and pour over chicken. Cover pan with foil. Bake at 425 degrees for 30 minutes. Uncover and cook 20 minutes more, basting frequently. Cook until chicken has rich dark color.
