MOTHER'S OWN POTATO SOUP 
2 large potatoes (Irish is best)
1 large onion, chopped
3 slices bacon, cut into pieces
1/2 cup water
3 cups milk
2 tbsp. butter
salt and pepper, to taste

Peel and cube potatoes; cook with onion and bacon pieces in water. When done, mash ingredients. Do not pour off liquid as this retains valuable flavor and vitamins. Add milk and stir in butter, salt and pepper to taste. Heat thoroughly, but do not boil, as this may cause milk to curdle.

Serves 4.
