MANHATTAN MEATBALLS | |
2 lbs. ground beef 2 c. torn fresh bread 1/2 c. chopped onion 2 eggs 2 tbsp. chopped parsley 2 tsp. salt 2 tbsp. butter 10 oz. jar apricot preserves 1/2 c. barbeque sauce Combine first six ingredients. Mix lightly. Shape into 1 inch balls. Brown in butter and drain (or microwave). Place in 2 quart casserole. Combine preserves and barbeque sauce; pour over meatballs. Bake 350 degrees 30 minutes, stirring occasionally. They can also be placed in crock pot. |
