RUM AND ORANGE CHEESECAKE 
2 env. gelatin
1 c. sugar
1/4 tsp. salt
2 eggs, separated
1 c. milk
1 tsp. grated orange rind
2 tbsp. frozen orange concentrate
2 tbsp. light rum
1 1/2 lb. cottage cheese, sieved
1 c. whipping cream

CRUST:

2 tbsp. melted butter
1 tbsp. sugar
1/4 c. chopped nuts
2/3 c. graham cracker crumbs
1/4 tsp. cinnamon
1/4 tsp. nutmeg

Mix gelatin and 3/4 cup sugar and salt. Beat egg yolks, add milk and gelatin-sugar mix and cook and stir in a double boiler until slightly thick. Remove from heat and add orange rind, juice and rum. Cool. Add cottage cheese and chill until mixture gels slightly. Fold in beaten cream and egg whites beaten with 1/4 cup sugar. Pour into a springform pan with crust in the bottom. Chill overnight.
