MEXICAN MEAT LOAF 
3 lbs. ground beef
3 oz. taco sauce
12 single saltine crackers (crumbled)
1 med. diced onion
1 pkg. Lipton onion soup mix
2 eggs
2 tbsp. chili powder
8 oz. thick and chunky salsa
6 oz. sour cream
5 oz. shredded Cheddar cheese

Mix all ingredients except for 8 oz. salsa, sour cream and cheese. Shape into loaf, place into baking dish. Put 3 tbsp. salsa on top of loaf. Bake 45 minutes at 350 degrees. Drain off grease. Smooth rest of salsa over top of loaf, put sour cream on top of salsa, put cheese on top of sour cream. Bake an additional 20 minutes.
