MEXICAN STYLE CORN CHOWDER 
3 tbsp. butter
1 med. onion, chopped
1 med. green pepper, chopped
1 (12 oz.) can whole kernel corn with liquid
1 1/2 c. milk
1 sm. can sm. shrimp, drained
1 (10 1/2 oz.) container cold pack snack cheese product

Saute peppers and onions in butter in 2 quart saucepan. Stir in whole kernel corn with its liquid and the drained shrimp. Bring to a simmer. Do not boil!!! Reduce heat and add cheese snack. Mix and heat slowly until cheese is melted. Garnish with parsley or cilantro.
