MINESTRONE SOUP | |
3 slices bacon, chopped 1 onion, chopped 1/2 c. celery, chopped 2 cloves garlic, minced 1 tsp. basil leaves, crushed 1/2 tsp. salt 1 c. ditalini, uncooked 1 c. cabbage, cut in strips 1 c. zucchini, cubed 1 can Campbells beef broth 1 can Campbells bean & bacon soup 2 soup cans water 1 (16 oz.) can tomatoes, undrained Brown bacon, add onion, celery, garlic, and basil and cook until tender. Stir in soups, water, tomatoes, Ditalini, and salt. Bring to a boil, cover. Reduce heat; simmer 15 minutes. Add cabbage and zucchini. Cook 10 minutes more or until done. Stir occasionally. Serves 4. |
