BOEUF SOURGUIGNON BEEF BURGUNDY | |
1/4 lb. butter 6 med. onions, sliced 3 lbs. chuck, cubed 1 tbsp. flour 1 tsp. salt 1/4 tsp. pepper 1/4 tsp. thyme 1/2 tsp. marjoram 2 c. beef broth 1 1/2 c. burgundy 1 lb. fresh or 1 (No. 2) can mushrooms Saute onion in butter in a heavy saucepan; add meat, brown on all sides; add flour, salt, spices, stirring until smooth. Now add 1/2 cup broth and 1 cup wine, simmer 3 hours. Add mushrooms; continue cooking another hour. Add more broth or wine as necessary during cooking. May be prepared in advance. |
