MILLET LOAF 
3 c. cooked millet (1 c. uncooked)
5 scallions, chopped
2 carrots, grated
1/2 c. slivered green beans
2 eggs
1/4 to 1/2 c. whole wheat flour
1 c. grated cheese
Toasted sesame seeds (garnish)

Mix all ingredients together and press into an oiled loaf pan. Bake 1 hour at 350 degrees. Garnish with toasted sesame seeds. The mixture also makes delicious croquettes.
