PARTY GELATIN SALAD | |
1 lg. box lemon or orange jello 1 c. miniature marshmallows 1 lg. can crushed pineapple (drain and save juice) 2 c. boiling water 1 (12 oz.) can 7-UP or Sprite 4-5 lg. bananas TOPPING: Use syrup from pineapple plus water to make 1 c. 1/3 c. sugar 2 tbsp. flour 1/2 c. nuts 1 beaten egg 1 (8 oz.) carton Cool Whip 3/4 c. grated cheddar cheese In a 9x13 Pyrex dish, mix jello and boiling water. As soon as the jello has begun to dissolve, add the marshmallows and allow them to dissolve some, too. Add the canned drink, pineapple and bananas which have been cubed. Stir until fruit is evenly mixed and chill until set. Meanwhile, make topping: Mix sugar and flour in a small pan and add the syrup from the pineapple plus enough water to make a cup. Bring to a boil, stirring constantly, until thickened. Cool, stirring a couple of times. Just before spreading on set jello mix, add the carton of Cool Whip. Stir lightly, just until well-mixed and spread over jello. Sprinkle with cheese and chopped nuts. Serves 12-15. |
