DELICIOUS OATMEAL CAKE 
1 c. rolled oats
1 c. raisins
1 1/4 c. boiling water
1/2 c. butter
1 c. brown sugar
1 tsp. vanilla
2 eggs
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg

Pour water over oats and raisins; cover and set aside. Cream brown sugar, butter and vanilla. Add the eggs, then the oats. Mix well and stir in dry ingredients. Pour into 9 x 13-inch greased pan.

Bake at 350°F for 35 minutes.

Optional: Drizzle a thin water and confectioners sugar icing on while still warm.
