BEEF BRISKET 
1 tbsp. liquid smoke
1 tsp. garlic salt
1 tsp. celery, seed
1 1/2 tsp. soy sauce
2 tsp. Worcestershire sauce
2 tsp. ground pepper
3 to 4 lb. beef brisket (well trimmed)

Combine first 8 ingredients. Pour over brisket and marinate 4 to 5 hours. (Poke with meat fork and turn couple of times.) Cover lightly with foil or put in pan with lid. Bake for 300 degrees for 3 1/2 hours. Pour sauce over and bake 1 more hour. Let stand 20 to 30 minutes before slicing.

BARBEQUE SAUCE:

3 tbsp. brown sugar
1/2 c. ketchup
1 tsp. dry mustard
1 tbsp. lemon juice
Dash nutmeg
1 tbsp. soy sauce
