AMAZING COCONUT PIE 
2 c. milk
3/4 c. sugar
1/2 c. Bisquick
4 eggs
1/8 - 1/4 tsp. nutmeg
1/4 c. butter, melted
1 1/2 tsp. vanilla extract
1 c. coconut for pie topping

Combine ingredients, except coconut, in blender. Cover and blend on low speed for 3 minutes; or on high speed for 1 minute and if you use a hand beater, beat for 2 minutes. Pour into a greased pie plate (9") and let stand for 5 minutes. Sprinkle coconut all over top. Bake in a 350 degree oven for 40 minutes; or until knife inserted in center of pie comes out clean. Makes its own top and bottom crust. Serve warm or cold. NOTE: Makes a quick and easy delicious pie.
