BRIE POTATOES 
6 baking potatoes
12 oz. cold brie cheese-rinds removed, then dice
1/3 c. diced chives
1/3 c. unsalted butter, cut in bits
1 1/2 tsp. salt
1/4 tsp. ground pepper
1/2 tsp. Beau Monde seasoning

Cook potatoes in salted water until tender. Drain and peel. Coarsely mash potatoes. Fold in remaining ingredients. Bake at 450 degrees until hot, about 10-15 minutes.
