HOT OATMEAL POTATOES 
2 lb. new potatoes, scrubbed
1/4 c. butter
6 spring onion
1/2 c. quick-cooking oatmeal
1/4 c. cream (opt.)
1 tbsp. chopped parsley

Prick the new potatoes several times with a fork. Place in a deep dish with 1 cup salted water. Cover with a lid or cling film (plastic wrap) and microwave on full power for 10 minutes. Allow to stand for 3 minutes.

Test the potatoes; if they are not quite cooked, give the dish a quarter turn, cut the potatoes into even slices. Melt the butter in a dish. Add four chopped spring onions, stir well and mix in the sliced potatoes and the oatmeal. Cook on full power for 5 minutes. Add 1/4 cup cream to the potatoes if liked.

TO SERVE: Sprinkle with the remaining two chopped spring onions and the parsley.

Since microwave ovens vary in power, you may need to adjust your cooking time.
