BEET SALAD 
1 (3 oz.) lemon Jello
1 c. hot water
3/4 c. beet juice
1 c. shoe string beets
1 c. celery, cut fine
3 tbsp. vinegar
1 tbsp. sugar
1 tbsp. horseradish
1/2 tsp. salt
2 tbsp. onion juice

Mix everything together. Refrigerate until set. Serves 8.
