QUICK AND EASY LINGUINE WITH
SHRIMP SAUCE
 
1 1/2 lbs frozen or fresh shrimp, peeled and deveined
2-3 cloves fresh garlic, minced
1/4-1/3 c. olive oil
1/8 c. water
Salt to taste
Fresh parsley, chopped
Dash of oregano
1 1/2 tbsp. olive oil
Palm full of salt

1. Start large pot of water boiling. Add 1 1/2 tablespoons olive oil and palmful of salt. Boil and stir linguine for about 10 minutes.

2. Saute garlic in olive oil taking care not to over brown. Let cool for 2-3 minutes.

3. Start to heat gradually again adding shrimp. Saute shrimp gently, adding oregano and pinch of salt, for about 5 minutes.

4. Add water and stir and saute about 2 or 3 minutes more.

5. Drain linguine and put into 1 larger or 4 smaller bowls, pouring shrimp sauce on top and garnishing with chopped fresh parsley. Serves 4.
