SALMON PATE 
1 (5 1/2 oz.) can salmon
1 tsp. prepared horseradish
1/8 tsp. liquid smoke
1 pkg. cream cheese, room temp.
1 tsp. grated onion
1/4 tsp. salt
1 tbsp. fresh lemon juice
1/8 tsp. pepper
Garnishes

Sliced almonds for scales, stuffed green olives for eyes and celery stalks and parsley for fins.

Drain, debone and flake salmon. Mix together with all other ingredients, except garnishes. On a pretty dish, mold mixture in a fish shape. Arrange almonds to look like scales, use slice of green olive for eyes. Thin strip of celery for the fins. Low in salt, sugar and fat. Great for diabetics.
