CREOLE CHICKEN AND RICE 
3/4 c. water
1/4 tsp. salt
3/4 c. instant rice, uncooked
Vegetable cooking spray
2 skinned, boned chicken breast, halved
1 can tomato sauce (8 oz.)
1/4 c. water
1/4 c. chopped onion
2 tbsp. chopped green pepper
1 clove garlic, minced
1/2 tsp. dried basil
1/8 tsp. pepper

Combine 3/4 cup water and salt in a small saucepan, bring to a boil. Remove from heat, stir in rice, cover and let stand 5 minutes.

Coat large nonstick skillet with cooking spray. Place over medium heat until hot. Add chicken, cook until brown and tender. Add tomato sauce and next 6 ingredients. Bring to a boil. Cover and reduce heat and simmer 6 minutes, stirring occasionally. Serve with rice.
