OATMEAL ALMOND COOKIE 
1 c. butter (soft)
1 c. firmly packed brown sugar
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 c. oatmeal
1 c. currants
1 (12 oz.) pkg. almond bark chips, melted
1 c. walnuts, broken in large pieces

Heat oven to 350°F. Beat together butter and sugar until creamy. Add combined flour, soda, cinnamon and salt. Mix well. Stir in oats, walnuts and currants; mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet.

Bake 10 to 12 minutes or until golden brown.

Melt almond bark in microwave for 1 minute. Take out and stir; repeat until almond bark is melted. Frost cookies on bottom and top. Lay on wax paper until almond bark is hard.

Makes about 4 dozen.

Since microwave ovens vary in power, you may need to adjust your cooking time.
