CHILIES RELLENOS CASSEROLE 
2 (4 oz.) cans whole green chilies
1 lb. shredded cheese (Mozzarella, Jack)
3 lg. eggs

1 recipe cornmeal pancakes as follows: 1/2 c. whole wheat flour 2 eggs 1 tsp. baking soda 1 c. cornmeal

Mix in order. Mix well. Salsa or taco sauce

Preheat oven to 375 degrees. Grease shallow baking dish well. Stuff chilies with Jack cheese and place in casserole. Mix pancake batter well. Then beat 3 large eggs with mixer until fluffy. Fold in pancake batter and pour over chilies. Sprinkle yellow cheese over top. Bake 30 minutes or until puffed and browned. Serve with salsa.
