CHICKEN BREASTS COACHELLA 
1 c. Sun Giant dates, chopped
2 c. seasoned stuffing mix
2/3 c. water
4 tbsp. melted butter
1 c. chopped celery
6 lg. boned chicken breasts
2 tbsp. melted butter
1/2 c. slivered Sun Giant pitted dates
2 tbsp. dry white wine
1 c. orange juice
1/8 tsp. cinnamon
Salt to taste
Orange slices for garnish

Mix chopped dates, stuffing mix, water, butter and celery. Spread on a 12 x 8 inch greased baking dish or large oven-proof platter. Arrange chicken breasts, skin-side up, on top of dressing mixture. Brush with melted butter. Cover with foil and place in 375 degree oven for 1/2 hour. Remove foil and continue baking until chicken is fork-tender, about 15-20 minutes. Serve with date-orange sauce on the side.

Sauce: In a saucepan, mix slivered dates, wine, orange juice, cinnamon and salt. Bring to a boil, stirring frequently. Turn down heat and simmer 3-4 minutes. Serve hot as a sauce for chicken breasts. Serves 4-6.
