APPLE CINNAMON BREAD 
2 c. flour, unsifted
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
1 c. sugar
1/2. c. shortening
2 eggs
1 tsp. vanilla
2 lg. apples, about 2 c. pared & chopped

Sift dry ingredients together. Beat sugar, shortening, eggs, vanilla until light and fluffy. By hand stir in flour mixture, do not over mix; stir in apples. Spoon batter into pan greased on bottom only (loaf pan 9 x 5 x 3 inches). Sprinkle top before baking with 1 tablespoon sugar, 1/4 each cinnamon and nutmeg. Bake at 350 degrees about 50 minutes. Cool in pan 10 minutes.
