ITALIAN COOKIES 
1/2 lb. butter
2 c. sugar
3 eggs
4-6 c. flour
1 tsp. salt
2 tsp. baking powder
2 tsp. vanilla
1 lb. Ricotta cheese

ICING:

1 box powdered sugar
1 stick butter
3-4 tbsp. milk
Pinch of salt
1 tsp. vanilla

Cream 1/2 pound butter, sugar and eggs, one at a time. Add flour (4 to 6 cups, until stays firm like ball). Add salt, baking powder and vanilla. Start with flour and alternate with Ricotta, starting and ending with flour. Mix well, form balls about size of walnut. Place on lightly greased cookie sheet.

Bake at 350 degrees for about 20 minutes. Watch so they don't get too brown. Spread with butter icing (add food coloring for different color icing).
