LOW - CAL CHEESE CAKE 
1 can Pet milk, chilled
6 oz. pkg. lemon Jello
1 c. boiling water
3 tbsp. lemon juice
1 tsp. vanilla
8 oz. pkg. cream cheese, softened
1 c. sugar
22 graham crackers, crushed
1/2 c. butter

Dissolve Jello in boiling water; add lemon juice. Cool to consistency of egg white. Cream soft cream cheese, sugar and vanilla. Add to gelatin and mix well. Fold whipped canned milk into mixture. Prepare crust: firmly pack crushed graham crackers combined with melted butter into bottom of 9 x 13 inch pan. Bake at 325 degrees 8 minutes; add filling. Sprinkle some of crust mixture (before baking) on top. Chill. Can be made day ahead.
