PINEAPPLE - APPLESAUCE CAKE 
2 c. sugar
1 c. cooking oil
2 c. applesauce, unsweetened
2 c. crushed pineapple, drained
1 tsp. salt
2 tsp. cinnamon
2 tsp. nutmeg
1/2 tsp. cloves
1 tsp. allspice
1 c. raisins
1 c. pecans (optional)
4 c. flour (sift with salt & spices)
2 tsp. baking powder dissolved in 1/2 c. warm water

Combine all ingredients, stir well. Bake in a greased 10-inch pan at 350°F for 1 hour and 20 minutes or until cake tests done.

I made this cake tonight because I needed to make something with some leftover applesauce & crushed pineapple (do you know how hard it is to find anything good sounding with those two ingredients?? My gosh! lol) This cake is SUPER, duper, moist, and tastes like a really good spice cake. I only had half of the pineapple & applesauce ingredients, so I made a half cake in my Bundt pan (it was just a shorter cake, but still really pretty!). It baked in 35 minutes, and was really yummy. (I was a little leary of how much nutmeg & allspice it called for, but they were perfect.) The pineapple only added moisture, it wasn't a pineapple-y tasting cake. I would make this again. :)

Not a WOW cake, but truly a delightful snack cake that stays moist for days! Great for lunches (I know this for a fact, grins) and a treat first thing in the morning with a cuppa. If one wanted to gild the lily, a nice caramel sauce dripped over the sides would be an excellent addition, I think. Otherwise, just lovely as is.
