MARINATED BLACK-EYED PEAS | |
2/3 c. oil 5 tbsp. red wine vinegar 2 onions, chopped 1 c. chopped parsley 2 cloves garlic 2 tsp. crumbled basil leaf 1 tsp. oregano 1/2 tsp. dry mustard 1/2 tsp. red pepper dash of red pepper 1 pkg. (1 lb.) or 2-3 cans drained peas green pepper rings for garnish Combine oil, vinegar, onion, parsley, garlic, basil, oregano, mustard, black pepper, red pepper in a 4 cup measuring bowl. Reserve. Place peas in a large bow. Pour dressing over peas. Toss gently. Cover and refrigerate. Marinate overnight. Toss once. Line large platter with pepper rings and place peas in center. May add cubed ham and cheese. |
