SALMON QUICHE 
1 (9 inch) pie crust
1 can (8 oz.) salmon, drained, flaked
2 green onions, chopped (about 3 tbsp.)
4 eggs
2 c. whipping cream
3/4 tsp. salt
1/4 tsp. sugar
1/4 tsp. cayenne pepper

Mix salmon and onions. Put in pastry-lined pie plate. Beat eggs slightly; beat in cream, salt, sugar and red pepper. Heat oven to 425 degrees. Pour egg mixture over salmon/onion already in pie plate. Bake 15 minutes. Reduce oven temperature to 300 degrees and bake until knife inserted one inch from edge comes out clean (about 45 minutes). Cool 10 minutes before cutting. Tastes good cold, too.
