RAINBOW COLE SLAW 
2 c. shredded green cabbage
1 c. shredded red cabbage
1 carrot, grated
1/3 c. finely chopped onion
1/3 c. finely chopped green pepper
1/4 c. finely chopped sweet red pepper
1 tbsp. chopped fresh parsley
1 c. diced red apple, unpeeled
1/2 c. sour cream
1/2 c. mayonnaise
2 tsp. sugar
Salt and pepper to taste
1 tsp. cider vinegar

In a large bowl combine the cabbages, carrot, onion, peppers, parsley and apple.

In a separate bowl whisk together remaining ingredients. Pour over vegetables and mix gently. Cover and refrigerate until thoroughly chilled. Mix gently before serving.
