SPAGHETTI BOLOG'NASE 
3/4 to 1 lb. Italian sausage
2 medium onions, chopped
1 carrot, thinly sliced
1 clove garlic, minced
1/4 lb. mushrooms, sliced
1 rib celery
1 green pepper
2 (15 oz.) cans tomato sauce
1/2 c. water or 1/4 c. red wine
2 tbsp. oil
1 tsp. sugar
1/4 tsp. Italian herb seasoning (increase to taste)
basil, oregano, garlic and red pepper

Sauté mushrooms, carrot, onions and green pepper in oil. Add sausage and cook until sausage is done. Drain well. Add remaining ingredients. Simmer 40 minutes (or longer).
