SOFT RAISIN COOKIES 
1 c. water
2 c. raisins
1 c. shortening
1 3/4 sugar
2 eggs
1 tsp. vanilla
3 1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. chopped walnuts

Combine raisins and water in a small saucepan; bring to a boil. Cook for 3 minutes. Remove from the heat and let cool (do not drain). In a mixing bowl, cream shortening; gradually add sugar. Add eggs and vanilla. Combine dry ingredients; gradually add to creamed mixture and blend thoroughly. Stir in nuts and raisins. Drop by teaspoonfuls 2-inches apart on greased baking sheets.

Bake at 350°F for 12 to 14 minutes.

Yield: About 6 dozen. Good Luck.
