EGG SALAD 
1 env. Knox gelatin, plain
1/2 c. water
2 tbsp. lemon juice
3/4 c. mayonnaise
1/2 c. diced celery
1/4 c. diced red and green pepper (can use pimento for the red pepper)
Dash of salt
Little bit of onion, if desired
4 hard cooked eggs, diced

Mix gelatin, water, and lemon juice. Add rest of ingredients, put into a mold and let sit. Can add a few diced chestnuts if desired.
