CEDAR PLANKED RAINBOW TROUT 
whole rainbow trout, head removed
1/2" cedar plank
olive oil
Greek or Mediterranean seasoning

Soak cedar planks in water for at least 1/2 hour prior to grilling. Rub trout with olive oil and add seasoning, to taste, and set aside. Make sure to season inside of cavity as well.

Put plank on grill over high heat until it just begins to smoke. Place trout on plank belly down (use belly flaps to hold trout upright).

Reduce to medium/medium high heat depending on grill and cook for approximately 20 minutes.

When dorsal fin pulls out easily, fish is done.

Fantastic - the easiest grilled whole fish I've ever made. Used fresh rainbow trout stuffed with thyme and added garlic to the olive oil. It cooked exactly as the recipe said. Dorsal fin pulled out, then it took no time to peel off skin and lift fillets off the bone. Perfect.

Only thing is that I would create a sauce, as the plank didn't add that much flavour.

Nice recipe Kyle. I've always gone skin down when using cedar plank but this turned out very nice and moist. Just right at 20 minutes. I used McCormicks Italian seasoning plus garlic powder.
