STRAWBERRY BREAD 
2 (10 oz.) pkgs. frozen strawberries, thawed, partially drained & cut up
4 eggs
1 1/4 c. vegetable oil
3 c. flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
2 c. sugar
1 1/4 c. chopped pecans (opt.)

Mix together strawberries, eggs and oil. Sift dry ingredients into strawberry mixture. Stir to blend thoroughly. Stir in nuts.

Pour into 2 greased 9"x5" loaf pans. Bake in preheated 350 degree oven for 1 hour or until wooden toothpick inserted in center comes out dry.

NOTE: To keep nuts from going to bottom of the bread, reserve a little of the flour. Mix the reserved flour with the nuts before folding into the batter. Bread freezes well.
