COMPANY CHICKEN 
Use about 1 whole, small chicken breast per person, skinned and boned and cut in half. Bread breast in egg and bread crumbs and brown until golden. Place in shallow baking dish, cover with slice of Swiss cheese and add lots of sauteed mushrooms. Melt 1 stick of butter and mix with 3/4 cup white wine and pour over chicken and mushrooms. Bake at 350 degrees for 30 minutes. Very easy and good company dish.
