HOMEMADE BLACKBERRY PRESERVES | |
8 c. blackberries 4 c. sugar juice from 1 lemon Gently sort, rinse and drain fresh berries. Place them in a large pot with the sugar and lemon juice. Bring to a boil over medium-high heat. Reduce heat to medium-low and stir occasionally. This juicy mixture will thicken while it simmers. Skim off foam. Be careful not to overcook or it will become tarry. Fills 8 wide-mouth, one-pint jars. Follow manufacturer's directions for canning to assure sterile jars, well sealed flavor and a long shelf life. |
