SPINACH PIE 
1 1/2 lbs. feta cheese
3-4 eggs
Bread crumbs
Oregano
1/2 lb. mushrooms, sliced
1 lg. onion, diced
4 bags fresh spinach
1/2 lb. melted butter
1 pkg. filo dough

Clean and steam spinach; drain. Squeeze out water really well. Chop up fine. Saute mushrooms and onions. In large mixing bowl, mix feta cheese, eggs, bread crumbs, spinach, oregano, mushrooms and onions.

Grease large (lasagna type) pan. Lay out 6 to 7 layers of phyllo dough, buttering with pastry brush between each layer. Spread 1/2 of spinach mixture on top. Spread out another 6 to 7 layers of phyllo, buttering between each layer. Spread rest of spinach mixture. End with 5 to 6 layers of buttered phyllo. cut into squares before baking. Bake at 375 degrees for 30 to 45 minutes until golden brown.
