SAMSON'S STEAMED BROCCOLI WITH HOLLANDAISE SAUCE | |
Fresh broccoli 1/2 c. butter 3 egg yolks 1 1/2 tsp. lemon juice 1/2 tsp. salt Dash of paprika Place water in bottom of steamer. Wash broccoli and steam about 15 to 20 minutes. Easy Hollandaise Sauce: Cream thoroughly 1/2 cup butter, gradually beat in 3 egg yolks, 1 1/2 tablespoons lemon juice, salt, dash of paprika; blend well. Slowly stir in 1/4 cup boiling water. Place in top of double boiler. Cook over 1 1/2 cups boiling water 5 minutes, stirring constantly. Remove from heat; beat 1 minute. Makes 1 cup. |
