MARIE'S MOLASSES CAKE | |
1 c. molasses 3/4 c. butter 1 c. sugar 2 1/2 c. flour 1 tsp. cinnamon 1/2 tsp. allspice 1/2 tsp. ginger 2 eggs, well beaten 1 c. boiling water 1 tsp. baking soda Slightly sweetened whipped cream In large pan, heat molasses and butter. Add sugar and continue heating until sugar is dissolved. Remove from heat. Sift flour, cinnamon, allspice and ginger and add to molasses mixture. Add eggs and mix thoroughly. Pour 1 cup boiling water over the above mixture and then sprinkle 1 teaspoon baking soda over the water; mix these ingredients into the batter. Pour into a well-greased 9x9 inch bake in 350 degree oven for 35-40 minutes. Serve warm with whipped cream. |
