SPINACH PIE 
4 (10 oz.) pkgs. frozen spinach
6 eggs
1 or 2 onions
3/4 c. butter
1/2 - 3/4 lb. Feta cheese
1 c. Parmesan cheese
1/3 c. bread crumbs

Cook spinach in more water than package specifies. Drain, remove excess water from spinach. Saute chopped onion in 1/4 cup of butter. Toss spinach in 1/4 cup butter. Beat eggs until lemon yellow.

Combine spinach, onion, eggs and 3/4 of the feta cheese (crumbled) and Parmesan cheese. Pat into a 9x13 baking dish. Crumble remaining 1/4 of feta cheese and mix with bread crumbs. Sprinkle feta and bread crumbs over spinach. Melt remaining 1/4 cup butter and drizzle on top. Bake at 350 degrees until the knife comes out clean (about 1/2 hour).
