SPICY APPLE PANCAKES WITH CIDER
SAUCE
 
2 c. Bisquick mix
1/2 tbsp. cinnamon
1/4 tsp. nutmeg
1 egg
1 1/3 c. milk
3/4 c. grated apples

Beat baking mix, cinnamon, nutmeg, egg and milk with rotary beater until smooth. Stir in apples. Grease griddle. Pour batter by 1/4 cup measuring cupfuls onto griddle. Cook on each side until golden brown. Serve with sauce.

CIDER SAUCE:

1 c. sugar
2 tbsp. cornstarch
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 c. apple cider
2 tbsp. lemon juice
1/4 c. butter

To prepare sauce - in saucepan mix sugar, cornstarch, cinnamon and nutmeg. Stir in apple cider. Add lemon juice. Cook, stirring constantly until thickened. Boil and stir 1 minute. Remove from heat. Stir in butter. Put on pancakes.
