ARTICHOKE RICE 
1 c. brown rice
1 c. turkey, cooked & cubed
1 can artichoke hearts, drained & chopped
1/2 c. green peppers, diced
1/2 c. black olives, chopped
1/4 c. green onions, chopped
1/2 - 1 c. mayonnaise
1 tbsp. curry powder
3 c. chicken stock

Cook rice in chicken stock until tender. Drain any remaining liquid. Mix together with the rest of the ingredients. Adjust curry and mayonnaise to taste. Cool before serving.
